RECIPE // Beef Stew in a Pumpkin! This is such a cool way to make stew and add a great touch to a Pumpkin Carving Party. Your guests will be pretty amazed that you cooked this and served it inside a pumpkin! #dinnerinapumpkin #recipe #halloween // A Year of FHE.

You will find a lot of Dinner in a Pumpkin recipes online, but they are mostly a chicken/rice combo that my family wasn't very excited about.

 A few years back I decided to apply the same rules for cooking inside a pumpkin to my own beef stew recipe, which usually cooks in a crock pot for 6 hours. I realized if I replaced the stew meat with cooked ground beef the stew would come together nicely in only 1.5-2 hours. The added bonus was that when we ate it for the first time my husband discovered he loved scooping some of the cooked pumpkin from the insides and mixing it into his stew. I am NOT of that camp, so I just take my stew from the middle. No side-scraping for me!

BEEF STEW IN A PUMPKIN
Recipe by Emilie Ahern

1 large pumpkin
1.5-2 lbs ground beef, cooked
4-5 medium yellow potatoes peeled and cut into 1/2" dice
1 medium onion, chopped
1/2 lb baby carrots, halved
3-4 cloves garlic, minced
2 cans tomato soup
1 can beef broth
1 pkg beef stew seasoning

salt and pepper to taste
1 bunch Italian flat leaf parsley, chopped

1. Remove 2nd rack from oven. Place remaining rack on the very bottom rack.

2. Preheat oven to 400 degrees. Remove and reserve top of pumpkin. Scoop out seeds and stringy pulp. Lightly oil inside of pumpkin with olive oil. Place on a double foil-lined cookie sheet.

3. In a large bowl, combine all ingredients except parsley and salt and pepper. Spoon mixture into the pumpkin, top with pumpkin lid, and cover top with foil.

Place on the baking sheet on bottom rack of oven and bake 1.5-2 hours or until potatoes and carrots are tender. Add chopped fresh parsley and salt and pepper to taste. Stir to combine.

Scoop out soup and parts of the cooked pulp when serving.
